Nivo Finess

We source all our foie gras from Nivo Finess. They are recognised as a food industry leader and innovator having exceptionally high ethical standards in sourcing, slaughtering and preparation. Their approach is simple: offer outstanding produce through a bespoke, customer-driven service.

The duck and goose livers are produced from cross-breeds allowing for the development of the ideal foie gras: a normal sized liver with a firm, solid structure. Having spent the majority of their lives outside the birds are brought indoors for the final 18 to 21 days where autumn simulation begins. This encourages the birds’ natural instinct to increase their appetite in preparation for its migratory flight.

The birds are fed using non-abrasive soft flexible tubing a nutritious corn blend soup in the size of a double espresso. One person controls the feeding and spends the entire final 3 weeks in the company of the birds to ensure low levels of stress and to produce the highest quality liver.

Through exceptionally high ethical standards of production Nivo Finess have managed to reinforce the idea that through correct husbandry the result is a far superior product.
